The Menu:
Starter: Pan con Tomate “Andalusia” — Crispy sourdough bread with fruity tomato pulp, first-class Picualia olive oil, and wafer-thin, aged Jamón Ibérico
Intermediate course: Gazpacho “Moderne” — Refreshing Spanish summer soup, elegantly finished with aged sherry vinegar and a delicate white tomato espuma
Main course from the live kitchen: Traditional paella, prepared fresh before your eyes directly in the giant pan. A refined interplay of noble monkfish, langoustine, succulent poularde breast, and spiced chorizo. Served alongside aioli, crusty bread, and a Pipirrana salad.
Dessert: Crema Catalana, accompanied by zestily marinated watermelon and a lemon sorbet
